On days like this, when I’m feeling a bit ‘meh’, only warm scones, smothered in clotted cream and jam, will do. This recipe is idiot proof, takes little prep and has few ingredients. Follow this and I guarantee you’ll have four fluffy scones on the table within 20 minutes.
There are only three in the picture as I scoffed one before taking the photo.
Preheat your fan oven to 180 degrees. Mix two tumblers of self-raising white flour, half a teaspoon of baking powder and a pinch of salt in a bowl. Beat one egg in a tumbler and pour one third sunflower oil and another third milk into it. Gently combine the wet ingredients with the dry. On a floured surface pat the dough until it is approximately 3 cm thick. Using a 31/2 inch cutter, cut out four scones, place on a lightly greased tray and bake for 15 minutes (until golden brown). There it is, warm scones and jam… my definition of comfort.
